A restaurant row of its own

The resort's dining promenade runs the length of the river frontage: fine dining at Étoile, the open-fire grill Marron, Cantonese at Golden Koi, a Japanese raw bar, an all-day brasserie and the chef's counter hidden behind the wine wall.

Priority reservations are held for signature suite guests and Crystal Club members, including late seatings after evening salon sessions.

Fourteen seats, one menu, no choices except the wine pairing. Executive Chef Adrien Moreau narrates each course over two and a half hours — a format food writers call Perth's most serious dinner.

Étoile fills two to three weeks ahead on weekends; the chef's counter often a month. Hotel guests can join a same-day waitlist through their liaison.

Every restaurant runs a parallel allergen menu, and the tasting menu can be fully adapted with 24 hours' notice.
